Brownie Batter Waffles With Strawberry Syrup

With the heat we’ve been experiencing here in northern California,
we have been eating a lot of salad for dinner.
Caesar with shrimp
with salmon
with chicken
I love salad
I really could it eat it every night during the summer.
the kids…
well that is a different story altogether.
It’s still hot,
and I’m still craving salad,
but tonight I wanted to give the kiddos something they could not complain about
breakfast for dinner

For the waffles:
  • 1/2 cup of flour
  • 1/2 cup of cocoa powder
  • 1/2 cup of almond meal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/4 cup of sugar
  • 1/4 cup of coconut oil {melted}
  • 1 tsp vanilla
  • 1/2 cup of milk
For the syrup
  • 2 cups of berries quartered
  • 1/2 cup of sugar
  1. combine the flour, cocoa, almond meal, salt, baking powder
  2. whisk together the eggs and the sugar
  3. mix in the oil and vanilla
  4. gradually stir in the dry ingredients
  5. alternating with the milk
  6. lightly oil the waffle iron
  7. use 1/4 cup of batter for each waffle
For the Syrup:
  1. Bring the berries and the sugar to a boil
  2. lower the heat
  3. cook stirring occasionally
  4. until the syrup begins to thicken {about 8 minutes}
